The Name — Gustave, Max, and Jo

The DuBois name carries a family story that Jordan DuBois has written about directly, and it’s the most substantial thing that sets this taproom apart from a generic craft beer spot.

His great-grandfather on his father’s side, Gustave DuBois, emigrated from Bruges, Belgium in the early years of the 20th century and settled — of all places — in Iowa, where he worked as a coal miner and married Hannah Schakel, a woman of Dutch ancestry. On his mother’s side, his grandfather Max Miller farmed more than 700 acres at one point and raised livestock, while his grandmother Jo kept a garden and chickens, cooked, canned, stitched, and knit.

Jordan has said the decision to put the family name on the business came later than the beer did, but that it fit: in French, DuBois means “of the wood” — convenient for someone drawn to oak-aged farmhouse beers and mixed-culture sour ales. The Belgian connection through Gustave gives the Dutch-language “Brouwerij” its logic, and the whole name reads as a nod to Gustave, Max, and Jo.

That family thread runs into the beer itself. One of the house saisons, Max and Jo, was brewed using corn grown on the same Iowa farmland his grandparents once worked.

The Taproom and the Saison Focus

The building is a former gas station, converted into a space the brewery describes as reminiscent of a grandmother’s house in the country — cozy rather than industrial, which sets it apart from most of the Winston-Salem brewery scene housed in restored warehouses and factories. Seating runs across an indoor taproom, an outdoor patio, a front porch, and a lawn. It’s dog- and family-friendly, and while there are TVs showing sports, the place isn’t set up as a sports bar.

The beer program leans hard into saisons — Jordan has written a piece called “The Gospel of Saison” on the brewery’s site explaining the style and why they keep evangelizing for it. If saisons aren’t your thing, the curated draft list carries plenty of other options, and the bottle menu is built specifically to push guests toward styles they haven’t tried.

Brouwerij DuBois also runs a steady calendar of neighborhood events — craft nights, intellectual puzzles, retro video game nights, original live music, and seasonal celebrations, listed on the “Shindigs” page of their website. Food trucks rotate through on a published schedule, since the taproom doesn’t have a kitchen of its own. Collaborations with other breweries are a regular part of the program as well.
